8 strips of bacon or ½ cup ham scraps
1 cup chopped onion
1 cup chopped celery
2 cups or more potatos cubed (could use hash browns)
½ cup or more carrot pieces
1 cup water
salt and pepper to taste
1 can cream of chicken soup
1 cup (more or less) sour cream
1 ¾ cups milk
¼ cup +/- shredded cheese
If using bacon, cook bacon in 3 qt. pot until crisp.
or
Use 1 ½ tbsp cooking oil (if using ham) to saute onion and celery about 3 minutes until pretty well done.
Pour off excess bacon drippings or excess oil.
If using ham, add it now.
Add potatoes, carrots, water, salt and pepper. Bring to a boil. Cover and simmer 10-15 min. until tender.
Gradually stir in chicken soup and 1 cup milk – rinse out soup can with rest of milk.
Add sour cream
Simmer, but do not boil, about 30 min.- 1 hr.
Either add the cheese early or near serving time – depending on whether you want it blended in the soup, or as a garnish.
- ·NOTE·
If cooking in CrockPot leave out milk. Cook 8-10 hours on low, or 5-6 hours on high.
