This is great for special mornings, such as Christmas or Easter!
Breakfast Casserole
3 cups shredded potatoes
½ c. melted margarine
1 c. chopped meat (ham, bacon, or sausage)
¼ c. shredded cheese (whatever type you like)
¼ c. chopped sweet peppers
¼ c. finely chopped onion (optional)
4 large eggs beaten
½ c. milk
salt and pepper to taste
Thaw potatoes between layers of paper towels to remove moisture. Press potatoes into bottom and sides of ungreased 9×13 casserole dish. Drizzle with melted margarine. Bake at 425° for 25 minutes or until lightly brown. Cool for 10 minutes (or until you get everything else ready)
Combine meat, cheese, peppers and onions. Spread into potato shell. Combine eggs, milk, salt and pepper. Pour over meat mixture. Bake at 350° for 25-30 minutes or until set. Let stand 10 minutes.
To make an extra large casserole
Use ½ pkg. of shredded hashbrowns
1 stick margarine
1 lb. sausage
2 cups shredded cheese
6 eggs
2/3 c. milk
peppers, onions, salt and pepper to taste, a little or a lot however you like it.
Baking instructions are the same.
