Apple Butter Bread
2 cups self-rising flour
1 cup sugar
2 tsp. ground cinnamon
2 eggs
1 cup margarine, melted and slightly cooled
¾ cup apple butter
2 Tbsp milk
¾ cup chopped pecans or walnuts*
½ cup raisins* *optional
Preheat oven to 350°. Grease and flour a 9x5x3 inch loaf pan. I use 2 small tube pans.
In a large mixing bowl, sift together flour, sugar, and cinnamon; set aside.
In another large mixing bowl, beat eggs, butter, apple butter and milk until well blended. Stir in nuts and/or raisins. Combine liquid and dry ingredients, stirring just until mixed.
Spoon mixture into prepared pans. Bake 60 to 65 minutes until a toothpick inserted in center comes out clean, Cool 15-20 minutes. Run a knife around the edge and remove from pan,
Serve warm or cool. It is EXCELLENT with coffee and makes a great quick breakfast. Can be frozen, however there probably won’t be any left to freeze!
