This is a variation that I often use when someone is sick. It is a little more “bland” and easier on the stomach. Of course, you can always add more onions, celery, cheeses, etc.
1 can cream of celery soup, rinse with 1 can water
1 can cream of onion soup, rinse with 1 can water
1 can cream of chicken soup (optional)
1 can chicken broth (or equivalent)
6-8 large (more or less) potatoes peeled and quartered
Salt and pepper to taste
About 2 inch “chunk” of Velveeta cheese or other cheese
About a “handful” of chunked up leftover ham, or bacon bits, or chicken – whatever you have on hand.
Combine all and let cook slowly until potatoes are done.
